This course lays the foundation for understanding how food and wine do (and sometimes do not) work together. Explore how the basic components of both food (acid, fat, protein, sweetness) and wine (tannin, acid, body, sweetness) complement one another as you taste through classic wine and food pairings. Students will also learn how flavor and aroma profiles (smoky, herbal, spicy, fruity, earthy) can be used to create a partnership better than the sum of its parts. There will be eating. There will be tasting. This should be a lot of fun . . .
There are no pre-requisites for this course; however, for newer students, the fundamentals learned in the Palate Primer Class, are a wonderful complement to this session.
